Andouille in comforting barbecue sauce

Ingredients:
4 cupOnions, finely chopped
1 cupCelery, finely chopped
1 cupBell pepper, finely chopped
1 cupParsley, finely chopped
1 cupPeanut oil
1 tbspGarlic, finely chopped
3 cupSteak sauce
1/2 cupLouisiana hot sauce or
3 cupKetchup
2 tbspCayenne pepper
3 tspSalt, to taste
1 cupSouthern comfort liquor
1 lbsAndouille sausage
Procedures:
1Saute onions, celery, bell pepper, and parsley in peanut oil until the onions are clear or tender.
2Add garlic and cook a little longer.
3Add steak sauce, hot sauce, and ketchup.
4Add salt to taste.
5Add southern comfort.
6Bring to a boil.
7Lower heat and cook for 2 to 3 hours.
8Makes about ?gallon.
9This will keep in the refrigerator for weeks.
10Slice 1 lb. andouille or smoked sausage ?inch thick and combine with 1 cup sauce.
11Heat well on stove or in a chafing dish.
12Serve with small pieces of french bread or use teethpicks to spear andouille.
13You will need plenty of napkins, also, too.
