Ingredients:
| 4
| cup | Chicken bouillon | | | Salt | | 1/2
| cup | Orzo | | 2
| large | Egg, separated | | 1
| | Lemon lemon juice | | 1
| tbsp | Chopped parsley, fresh |

Procedures:
| 1 | Bring broth to a boil in a saucepan. | | 2 | Add salt, then add orzo. | | 3 | Simmer until orzo is just tender, about 10 minutes. | | 4 | Meanwhile, beat egg whites until stiff. | | 5 | Add the yolks and beat well. | | 6 | Slowly add lemon juice to eggs, beating continuously. | | 7 | Pour off about 1 cup of the simmering broth and slowly add to the egg mixture while beating. | | 8 | When well mixed, pour this mixture into the pan with the remaining broth and orzo. | | 9 | Reduce heat to low and stir unitl heated through. | | 10 | Do not allow liquid to boil. | | 11 | Ladle into shallow bowls, sprinkle with parsley over each portion and serve at once |
