Apple-bacon quiches

Ingredients:
2 1/4 cupSifted flour
1 1/2 tspSalt
3/4 cupShortening
5 tbspCold milk
5 Eggs
1 tbspButter or margarine
1 cupDiced Canadian bacon
2 cupThinly sliced apples
-(red Delicious apples)
- (unpeeled)
1 tbspFlour
1 3/4 cupHalf and half
1/8 tspNutmeg
1/4 tspCaraway seeds
1/2 tspDry mustard
1 cupShredded Swiss cheese
Procedures:
1Combine sifted flour and 1 teaspoon salt.
2Cut in shortening until particles are size of peas.
3Sprinkle with about 5 tablespoons cold milk, adding just enough to make stiff dough.
4Shape into 6 balls.
5Roll out on lightly floured board to 6-inch circles and fit into 6 (5-inch) tart pans.
6Fold edges under and build up high fluted rim.
7Pierce all over with fork tines.
8Separate 1 egg.
9Beat egg white lightly and brush over bottoms and sides of shells.
10Bake below center of oven at 425f 15 minutes.
11Meanwhile, melt butter and saute bacon 1 minute.
12Add apple slices, cover and cook about 10 minutes, until apples are almost translucent.
13Beat remaining whole eggs with remaining egg yolk.
14Add flour, half and half, remaining ?teaspoon salt, nutmeg, caraway seeds and dry mustard and mix well.
15Sprinkle cheese evenly among tart shells, top with apples and bacon.
16Pour egg mixture into shells.
17Bake at 375f about 30 minutes, or until set in center.
18Cool to lukewarm before cutting
