Apple barley soup

Ingredients:
2 largeOnions, thinly sliced
2 tbspVegetable oil
3 1/2 cupVegetable stock
1 1/2 cupApple cider
1/3 cupPearl barley
2 largeCarrots, diced
1 tspThyme
1/4 tspDried marjoram
1 eachBay leaf
2 cupUnpeeled chopped apples
1/4 cupFresh parsley, minced
1 tbspLemon juice
1/4 tspSalt
Procedures:
1In a small soup pot, saute onions in oil over medium heat for 5 minutes, stirring constantly.
2Reduce heat, cover and cook, stirring frequently for 10 min.or until onions are browned.
3Add stock, cider, barley, carrots, thyme, marjoram and bay leaf.
4Cover and cook for one hour or until barley is tender.
5Add apples, parsley and lemon juice.
6Cook for 5 minutes or until apples are slightly soft.
7Discard bay leaf and serve
