Apple stuffed mushrooms

Ingredients:
32 largeMushrooms, fresh
Vegetable cooking spray
3 tbspCelery, finely chopped
1/2 cupApple, minced
2 tbspFine, dry breadcrumbs
1 tbspParsley, fresh, chopped
2 tbspWalnuts, finely chopped
- toasted
1 tbspBlue cheese, crumbled
2 tspLemon juice
Procedures:
1Clean mushrooms with damp paper towels.
2Remove stems; finely chop 1/3 cup of stems, reserving remaining stems for another use.
3Set mushroom caps aside.
4Coat a small skillet with cooking spray; place over medium-high heat until hot.
5Add 1/3 cup reserved chopped mushroom stems and celery; saute 2 minutes or until tender.
6Combine celery mix, apple and next 5 ingredients in a small bowl; stir well.
7Spoon 1-?ts apple mix into each reserved mushroom cap.
8Place mushrooms in a 15x10" jelly roll pan; bake at 350°F for 15 minutes
