Ingredients:

| | To 4 drops baking essence | | | Lemon flavor | | | FOR BRUSHING: | | | A little milk | | | ICING: | | 3 1/2
| oz | (100g) icing sugar | | 1
| tbsp | Or 2 hot water |

Procedures:
| 1 | For the filling: peel and core apples and cut itno pieces. | | 2 | Add the sugar and the sultanas and stew for a short time over a slow heat, stirring all the time. | | 3 | Cool well through, sweeten to taste, then add the baking essence. | | 4 | Roll out the pastry thinly and cut out round shapes 4 in (10cm) in diameter. | | 5 | Pile some of the filling onto one half of the round and brush the edges thinly with milk. | | 6 | Fold over the free half of the round and use a baking essence bottle to press the edges well together. | | 7 | Lay on a greased baking sheet. | | 8 | Oven: moderately hot baking time: about 15 min. for the icing: sieve the icing sugar and blend with as much of the water as will give a good coating consistency. | | 9 | Brush the turnovers with the icing as soon as they come out of the oven |
