Ingredients:
, one 10 inch unbaked pie
-shell
14 ozArtichokes, canned, water
Packed
3 Eggs
8 ozNeutchatel cheese, softened
1 cupLow-fat cottage cheese
3/4 cupButtermilk
, 2 inch cube white cheese
-grated
(Meunster, Swiss or
-Mozzarella)
1 tspSalt
1/4 tspThyme
1/4 tspWhite pepper
1/4 tspBeau Monde seasoning
6 sliceLean bacon, cooked and
-crumbled
Procedures:
1Drain artichokes, cut in quarters.
2Beat eggs; add neufchatel, cottage cheese ann buttermilk.
3Add grated cheese.
4Stir in seasonings and crumbled bacon.
5Place artichokes in bottom ot pie shell; pour cheese mixture over artichokes.
6Bake at 375°F for 50 to 60 minutes or until toothpick comes out clean.
7Serves 4 to 6 rave revues, lakewood center associates to benefit the lakewood center for the arts, lake oswego, oregon (1986).
