Artichoke soup

Ingredients:
3 tbspButter
1 1/2 tbspShallots or green onions -
-minced
1 1/2 tbspFlour
3 1/2 cupChicken stock
3 cupArtichoke bottoms or crowns
-- drained (1 lb. cans)
1 cupHalf-and-half
Salt and pepper to taste
Procedures:
1Melt butter in 6- to 7-inch skillet over medium heat, allowing it to brown slightly.
2Add shallots and saute briefly.
3Stir in flour and cook for 2 to 3 minutes.
4Heat chicken stock in 2-qt.
5Saucepan.
6Add flour mixture, stirring constantly.
7Cook over medium heat until slightly thickened, about 3 to 5 minutes.
8Puree artichoke crowns in food processor or blender.
9Add thickened chicken stock and half-and-half and blend thoroughly, about 30 seconds.
10Season with salt and pepper.
11Serve hot or cold.
12Note: may be made ahead and refrigerated.
13This one can be served hot or cold.
14Also good for those who would fear fooling with fresh artichokes.
15If made with vegetable broth, could also be vegetarian.
