Ingredients:

| cup | Olive oil | | 1/4
| cup | Onion, minced | | 1
| tsp | Sugar | | 1/4
| cup | Scallions, minced | | 1
| tbsp | Lemon juice | | 1
| tsp | Garlic, minced | | | Pepper freshly ground | | 1/4
| cup | Green pepper, chopped | | 1
| cup | Tomatoes, diced |

Procedures:
| 1 | Preheat the oven to 400 degrees. | | 2 | Place the eggplant on a sheet of aluminum foil and bake for 1 hour, or until the eggplant "collapses". | | 3 | Let cool. | | 4 | Remove the pulp. | | 5 | There should be about 3 cups. | | 6 | Add the onion, scallions, garlic, green pepper, tomatoes, olive oil, sugar, lemon juice and pepper. | | 7 | Serve with toast or crackers |
