Ingredients:
6 largeEggplants
2 Lemons, juiced
2 tbspTahini
Salt
1 largeGarlic clove
1/4 cupChopped parsley, fresh
2 tbspOlive oil
Procedures:
1Cook eggplants whole on all sides, turning as necessary til lthey are soft throughout & the skin is charred.
2Set aside to cool for 1 hour.
3Peel eggplants & discard skin.
4In a mixing bowl, add lemon juice & tahini.
5Blend well.
6Add salt to taste.
7Finely chop the garlic clove & add to mashed eggplant.
8Stir well & chill.
9To serve, place in a flat serving dish & garnish with parsley.
10Pour olive oil the top.
