Ingredients:
1 xMed eggplant, peeled *
1/4 cupTahini
1 tbspLemon juice
1 xClove garlic
1/4 tspBlack pepper
1 dashGround cumin
2 tbspSesame seeds
2 tbspFinely chopped fresh parsley
Procedures:
1* and cut into ? cubes (about 3 cups) steam eggplant until tender, about 8 minutes.
2Place cooked eggplant in food processor.
3Add tahini (sesame paste),lemon juice, and garlic.
4Puree.
5Stir in remaining ingredients; spoon into serving bowl.
6Garnish with parsley sprig.
7Serve warm or chill.
8Makes 2 cups.
