Ingredients:
1 (7-oz) or ?lb pkg elbow
-macaroni - 2 cup uncooked
6 sliceTo 8 sl bacon chopped
2 cupShredded american cheese
2 cupShredded monterey jack
-cheese
2 cupSoft bread cubes
1 medOnion finely chopped
1 smallGreen bell pepper finely
-chopped
4 Egg separated
2 cupMilk
1 tspSalt
6 To 8 drop bottled hot pepper
-sauce
Procedures:
1Red salsa (optional) prepare elbow macaroni according to package directions; drain.
2In medium skillet, cook bacon until crisp; drain.
3In large bowl, combine macaroni, bacon, cheeses, bread cubes, onion and green pepper.
4In medium bowl, beat together egg yolks, milk, salt and hot pepper sauce.
5Add to macaroni mixture; mix well.
6In large bowl, beat egg whites until stiff.
7Fold into macaroni mixture.
8Put into buttered 12 inch quiche dish or a 13 x 9 inch baking dish.
9Place a shallow baking dish with 1-2 inches water on lowest rack of a 325 degree oven.
10Place quiche on center rack.
11Bake until set and knife inserted in center comes out clean, about 1 hour.
12Let stand 5 minutes before cutting.
13Garnish as desired.
14Serve with salsa.
15Refrigerate leftovers
