Ingredients:

| lbs | Unshelled med. shrimp | | 1
| tbsp | Pickling spice | | 2
| | Celery tops (or more) | | | Salad greens | | 2
| | Tomatoes, cut in wedges | | 2
| tbsp | Capers | | 2
| | Hard-cooked eggs, sliced | | 3
| tbsp | Oil & vinegar dressing * |

Procedures:
| 1 | *note: bottled or homemade dressing may be used. | | 2 | Drop shrimp into boiling salted water to cover and add pickling spice and celery tops. | | 3 | Bring again to boil and cook, uncovered, 2 to 3 minutes. | | 4 | Drain, peel and devein shrimp. | | 5 | Place in bowl, cover tightly and chill several hours. | | 6 | Line serving bowl with greens. | | 7 | Arrange shrimp and tomato wedges in bowl. | | 8 | Sprinkle with capers and garnish with sliced eggs. | | 9 | Sprinkle with dressing and serve at once. | | 10 | Pass more dressing, if desired |
