Foil roasted chicken with vegetables

Ingredients:
3 1/2 lbsFRYER CHICKEN
1 tspSALT AND PEPPER
1 lbsZUCCHINI, SLICED ? THICK
4 eachCARROTS, HALVED LENGTHWISE
2 eachPOTATOES, HALVED
1 tspCHOPPED PARSELY
Procedures:
1Rinse chicken in water and pat dry.
2Sprinkle cavity with salt and pepper.
3Hook wing tips behind back to hold to hold neck skin.
4Tie legs together.
5Place chicken on large rectangle of heavy aluminum foil.
6Arrange vegetables around chicken and sprinkle with salr and pepper to taste.
7Fold foil over and pinch ends shut to seal.
8Bake at 375 °F for 1 hour.
9Open foil and fold back.
10Bake 20 minutes longer.
11Sprinkle with parsely
