Ingredients:

| cup | Sliced green onions | | 1
| tbsp | Butter or margarine | | 6
| | Eggs, beaten | | 1/2
| cup | Milk | | 3/4
| tsp | Salt | | 1/4
| tsp | Hot pepper sauce | | 2
| cup | Cooked rice | | 1
| med | Tomato, chopped | | 1
| can | Chopped green chilies (4 oz) | | 4
| oz | Shredded Cheddar cheese |

Procedures:
| 1 | Cook onions in butter until tender in 10-inch skillet over medium-high heat. | | 2 | Beat eggs with milk, salt, and pepper sauce. | | 3 | Stir in rice, tomato, and chilies. | | 4 | Pour into skillet. | | 5 | Reduce heat to medium-low. | | 6 | Cover; cook until top is almost set, 12 to 15 minutes. | | 7 | Sprinkle with cheese. | | 8 | Cover, remove from heat, and let stand about 10 minutes. | | 9 | Conventional oven: combine eggs, milk, salt, and pepper sauce in large bowl; whisk to blend. | | 10 | Stir in rice, tomato, cheese, chilies, and onions. | | 11 | Pour into greased 10-inch baking dish. | | 12 | Bake at 375 degrees 30 minutes or until knife inserted in center comes out clean. |
