Ingredients:
1/2 cupSliced green onions
1 tbspButter or margarine
6 Eggs, beaten
1/2 cupMilk
3/4 tspSalt
1/4 tspHot pepper sauce
2 cupCooked rice
1 medTomato, chopped
1 canChopped green chilies (4 oz)
4 ozShredded Cheddar cheese
Procedures:
1Cook onions in butter until tender in 10-inch skillet over medium-high heat.
2Beat eggs with milk, salt, and pepper sauce.
3Stir in rice, tomato, and chilies.
4Pour into skillet.
5Reduce heat to medium-low.
6Cover; cook until top is almost set, 12 to 15 minutes.
7Sprinkle with cheese.
8Cover, remove from heat, and let stand about 10 minutes.
9Conventional oven: combine eggs, milk, salt, and pepper sauce in large bowl; whisk to blend.
10Stir in rice, tomato, cheese, chilies, and onions.
11Pour into greased 10-inch baking dish.
12Bake at 375 degrees 30 minutes or until knife inserted in center comes out clean.
