Ingredients:
4 largeChicken breasts
1/2 cupPacked brown sugar
1/2 cupWater
1/2 cupSoy sauce
1/2 cupCooking sherry
2 tbspCooling oil
2 tspVinegar
1 tspGround ginger
1 Clove garlic, minced
1 canPineapple or 1 fresh
-pineapple (preferred)
Procedures:
1Bone chicken breasts and cut in 12 pieces.
2Place on bottom of a flat dish.
3Mix sugar, water, soy sauce, cooking sherry, oil, vinegar, garlic and ginger in a bowl for marinade.
4Pour marinade over chicken.
5Let sit at least one hour.
6Drain and reserve marinade.
7Prepare fresh pineapple into spears or drain canned pineapple chunks and string in sticks.
8Grill chicken on medium coals for 25 to 30 minutes, turning and basting often with reserved marinade.
9You may bake chicken in oven on 400 degrees.
10Baste often until browned lightly, about 30 minutes or until tender.
11Grill pineapple about last 10 minutes, basting with marinade.
12Serve pineapple with chicken over rice or potatoes
