Herring stir-fry

Ingredients:
2 smallHerrings
1 Inch root ginger, peeled
1 smallCarrot, peeled
1 smallOnion, peeled
2 ozBroccoli
2 ozCaulitlower
1 tbspVegetable oil
1 tbspLemon juice
Salt and black pepper
GARNISH
Thin strips of lemon rind
Procedures:
1Ask the fishmonger to bone and fillet the herrings.
2Cut the fillets into slices.
3Finely chop the ginger, cut the carrot into sticks and thinly slice the onion.
4Cut the broccoli and cauliflower into small ilorets.
5Heat the oil in a large frying pan or wok.
6Stir-fiy the ginger and vegetables for about 2 minutes.
7Add the herring slices and cook for a further 3 to 4 minutes, stirring carefully so the fish stays in shape.
8Just before serving add the lemon juice and seasoning.
9Sprinkle with the lemon rind.
10Serve with noodles or rice.
