Ingredients:
4 ozDiced smoked turkey sausage
-OR- ham (optional)
1 cupDiced onion
1/2 cupDiced celery
2 Garlic cloves, minced
2 cupLow-sodium chicken broth
4 ozBlack-eyed peas
--picked over and rinsed
1 Bay leaf
4 ozLong-grain white rice
1/2 tspDried thyme
1/2 tspPepper
1/4 cupChopped scallions
2 tbspMinced parsley
Procedures:

2Add sausage, if using; cook over medium heat, stirring occasionally, 3 minutes, until lightly browned.
3Add onion and celery; cook, stirring until onion is golden.

5Add broth, black-eyed peas, bay leaf and 2 cups water; bring to a boil.
6Reduce heat, cover and simmer 1 hour, until peas are soft but not mushy.
7Add rice, thyme and pepper; cover and simmer 15-20 minutes until rice is just tender.
8Remove from heat; let stand 10 minutes, covered.
9Sprinkle with scallions and parsley and serve.
