Ingredients:

| tbsp | Olive oil | | 2
| cup | Chopped onions | | 1
| med | Bell pepper, diced | | 2
| tsp | Basil | | 1
| tsp | Oregano | | 1
| tsp | Thyme | | 1 1/2
| tsp | Salt | | 13
| oz | Canned toamtoes, chopped | | 6
| oz | Tomato paste | | 1
| tbsp | Honey | | | Black pepper, lots | | 6
| each | Garlic cloves, minced | | | Parsley |

Procedures:
| 1 | Heat olive oil in a dutch oven. | | 2 | Add onion, bell pepper, herbs & salt. | | 3 | Saute over medium heat until the onion is fairly soft, 8 to 10 minutes. | | 4 | Add tomatoes, tomato paste, honey & black pepper. | | 5 | Bring to a boil. | | 6 | Lower heat & simmer, partially covered, for 20 to 30 minutes. | | 7 | Add garlic & cook 10 minutes more. | | 8 | Either let the sauce sit for a couple of hours or serve now. | | 9 | Serve over spaghetti & with homemade garlic bread. | | 10 | Mollie katzen, "moosewood cookbook", revised editio |
