Ingredients:

| each | Fresh Trout | | 1
| each | Large onion, chopped fine | | 8
| oz | Can tomato sauce | | 2
| each | Stalks celery, chopped fine | | 3
| tbsp | Oregano | | 1/4
| cup | Olive oil |

Procedures:
| 1 | In a large frying pan, mix oil, celery, onion, oregano, salt and pepper. | | 2 | Saute for 5 minutes. | | 3 | Add sauce. | | 4 | Simmer for 10 minutes or until thick. | | 5 | Add trout. | | 6 | Turn over after 4 minutes. | | 7 | Cook 12 more minutes or until done |
