Jamaica style hazelnut chicken

Ingredients:
2 largeWhole chicken breasts
-- split
Salt & pepper to taste
1/4 cupMargarine
6 ozOrange juice concentrate
-- thawed
1 Bay leaf
Juice of small lime
2 Firm ripe bananas
-- thinly sliced
1/2 cupFinely chopped hazelnuts
-(roasted Oregon hazelnuts)
Procedures:
1Season chicken with salt & pepper.
2Brown chicken on both sides in margarine in skillet over medium heat.
3Reduce to low and add ?cup water, 1 teaspoon salt, ?teaspoon pepper, orange juice and bay leaf.
4Bring to boil, cover & simmer for 20 minutes.
5Turn chicken once while cooking.
6Remove chicken and keep warm.
7Bring liquid to a boil over high heat for 5 minutes, constantly stirring.
8Stir in lime juice and bananas; heat gently.
9Place chicken on serving dish, top with sauce and sprinkle with nuts.
