Ingredients:
| 2
| large | Whole chicken breasts | | | -- split | | | Salt & pepper to taste | | 1/4
| cup | Margarine | | 6
| oz | Orange juice concentrate | | | -- thawed | | 1
| | Bay leaf | | | Juice of small lime | | 2
| | Firm ripe bananas | | | -- thinly sliced | | 1/2
| cup | Finely chopped hazelnuts | | | -(roasted Oregon hazelnuts) |

Procedures:
| 1 | Season chicken with salt & pepper. | | 2 | Brown chicken on both sides in margarine in skillet over medium heat. | | 3 | Reduce to low and add ?cup water, 1 teaspoon salt, ?teaspoon pepper, orange juice and bay leaf. | | 4 | Bring to boil, cover & simmer for 20 minutes. | | 5 | Turn chicken once while cooking. | | 6 | Remove chicken and keep warm. | | 7 | Bring liquid to a boil over high heat for 5 minutes, constantly stirring. | | 8 | Stir in lime juice and bananas; heat gently. | | 9 | Place chicken on serving dish, top with sauce and sprinkle with nuts. | | 10 | * cookfdn brings you this recipe with permission |
