Ingredients:
| 1
| large | Eggplant | | 1/3
| cup | Cooking oil | | 1
| lbs | Ground beef | | 2
| cup | Chopped onion | | 1
| | (16 oz)can tomatoes, cut up | | 1/3
| cup | Uncooked rice | | 1 1/2
| tsp | Garlic salt | | 1
| tsp | Salt | | 1/4
| tsp | Pepper |

Procedures:
| 1 | Peel eggplant; cut in 1" slices. | | 2 | Lightly brown eggplant slices in hot oil in a large skillet. | | 3 | Remove from skillet. | | 4 | Add ground beef and onion to skillet; cook, stirring frequently, until beef is browned. | | 5 | Add tomatoes, rice, garlic salt, salt and pepper; bring to a boil. | | 6 | Place half of eggplant slices in greased 2-?qt. casserole. | | 7 | Top with half of beef mixture. | | 8 | Repeat layers. | | 9 | Cover and bake in 350°F oven for 1 hour. |
