Ground beef/eggplant casserole

Ingredients:
1 largeEggplant
1/3 cupCooking oil
1 lbsGround beef
2 cupChopped onion
1 (16 oz)can tomatoes, cut up
1/3 cupUncooked rice
1 1/2 tspGarlic salt
1 tspSalt
1/4 tspPepper
Procedures:
1Peel eggplant; cut in 1" slices.
2Lightly brown eggplant slices in hot oil in a large skillet.
3Remove from skillet.
4Add ground beef and onion to skillet; cook, stirring frequently, until beef is browned.
5Add tomatoes, rice, garlic salt, salt and pepper; bring to a boil.
6Place half of eggplant slices in greased 2-?qt. casserole.
7Top with half of beef mixture.
8Repeat layers.
9Cover and bake in 350°F oven for 1 hour.
