Ingredients:

| cup | Boiling water | | 1
| tbsp | Olive oil | | 1
| large | Yellow onion, minced | | 1
| large | Garlic clove, minced | | 1
| each | 1 inch slice ginger, minced | | 3
| tbsp | Tomato paste | | 1
| cup | Stewed tomatoes | | 2
| tsp | Curry powder | | 1
| tsp | Salt | | 1/8
| tsp | Cayenne | | 1
| cup | Green peas | | 1
| cup | Mushrooms, sliced |

Procedures:
| 1 | Combine tvp & water in a bowl. | | 2 | Let syand for 10 minutes. | | 3 | Heat oil in a large cast-iron skillet or wok. | | 4 | Stir-fry onion, garlic & ginger for 5 minutes. | | 5 | Add tvp & stir-fry another 5 minutes. | | 6 | Add tomato paste, tomatoes, curry powder, salt & cayenne. | | 7 | Simmer a few minutes. | | 8 | Add peas & mushrooms. | | 9 | Bring to a boil, cover & simmer over low heat for 5 minutes. | | 10 | "vegetarian times" february, 199 |
