Ingredients:

| each | Pacific salmon fillets, 4 oz | | | -skinned | | 2
| each | Shallots, finely chopped | | 1/2
| cup | White wine | | 1/2
| cup | -Water | | | SAUCE | | 2
| each | Shallots, finely chopped | | 1
| cup | Fish stock | | 1
| cup | White wine | | 2
| tbsp | Lemon juice | | 1/2
| cup | Butter | | 2
| tbsp | Dill, finely chopped | | | -Salt and pepper |

Procedures:
| 1 | Combine shallots, salmon, wine and water in frying pan large enough to hold fillets in a single layer. | | 2 | Cover and bring liquid to just a simmer. | | 3 | Poach salmon about 2 minutes per side. | | 4 | Remove and keep warm. | | 5 | Reserve stock for sauce. | | 6 | Sauce: in a saucepan, bring shallots, stock, wine and lemon juice to a boil. | | 7 | Cook until liquid is reduced by half. | | 8 | Strain. | | 9 | Cut butter into small cubes & whisk into mixture one piece at a time. | | 10 | Do not let boil. | | 11 | Season with dill, salt and pepper. | | 12 | Serve warm. | | 13 | Serve with asparagus |
