Kim's pacific salmon

Ingredients:
4 eachPacific salmon fillets, 4 oz
-skinned
2 eachShallots, finely chopped
1/2 cupWhite wine
1/2 cup-Water
SAUCE
2 eachShallots, finely chopped
1 cupFish stock
1 cupWhite wine
2 tbspLemon juice
1/2 cupButter
2 tbspDill, finely chopped
-Salt and pepper
Procedures:
1Combine shallots, salmon, wine and water in frying pan large enough to hold fillets in a single layer.
2Cover and bring liquid to just a simmer.
3Poach salmon about 2 minutes per side.
4Remove and keep warm.
5Reserve stock for sauce.
6Sauce: in a saucepan, bring shallots, stock, wine and lemon juice to a boil.
7Cook until liquid is reduced by half.
8Strain.
9Cut butter into small cubes & whisk into mixture one piece at a time.
10Do not let boil.
11Season with dill, salt and pepper.
12Serve warm.
13Serve with asparagus
