King ranch chicken lite

Ingredients:
6 largeChicken breast halves, boned
-and skinned
1 cupWater
10 ozPackaged corn tortillas
-(divided use)
Uartered d
1 medOnion (divided use), diced
1 medBell pepper (divided use)
-diced
2 cupVelveeta light cheese
-shredded
1/2 tspGarlic powder
1 1/2 tspChili powder
10 1/2 ozCampbell's cream of chicken
-soup, Healthy
Equest
10 1/2 ozCampbell's cream of mushroom
-soup, Healthy
Procedures:
1Equest 10 oz canned ro-tel tomatoes, : -chopped poach chicken in one cup of water for 10 minutes.
2Remove the chicken and let cool; reserve broth.
3When chicken is cool, shred into pieces.
4Dip half the tortillas in chicken broth to soften and place tortillas in a 9x13x2-inch baking dish to cover bottom.
5Pour ?cup of broth over tortillas.
6Layer with half of each of the chicken, onions and bell pepper.
7Repeat to make a second layer with remaining tortillas.
8Broth, chicken and vegetables.
9Sprinkle the top with the cheese, garlic and chili powder.
10Preheat oven to 350 °F.
11In medium bowl, combine soups and pour over casserole.
12Top with the ro-tel tomatoes.
13Bake for about 45 minutes.
14Makes 8 servings.
