Ingredients:
6 cupBeef Broth
1 cupElbow Macaroni
2 tbspOlive Oil
1 cupOnion, finely chopped
2 largeCloves Garlic, minced
1 tspDried Oregano
1 tspDried Basil
1/2 tspDried Thyme
3/4 lbsLean Ground Beef
28 ozCan Peeled Italian-Style
-Tomatoes
1 medZucchini
10 ozPackage Frozen Mixed
-Vegetables
15 ozCan Kidney Beans
Salt
Pepper
Red Wine Vinegar
Parmesan Cheese, grated
Procedures:
1Bring broth to a boil in a soup pot; add macaroni.
2Cook until al dente; cover and remove from heat.
3Heat oil in a 12" frying pan.
4Add onion, garlic and herbs and saute until onions are translucent.
5Stir in ground beef, breaking it up with a fork, and cook until beef is no longer pink.
6Break up tomatoes, removing tough stalk ends, and add to meat.
7Add zucchini and mixed vegetables and simmer for 15 minutes.
8Add to the broth and macaroni, along with the kidney beans and their liquid.
9Season with salt, pepper and red wine vinegar to taste.
10Garnish with parmesan cheese.
