Ingredients:
1 1/2 cupPink lentils
1 tbspFinely chopped ginger
1/2 tspTurmeric
1 tbspLemon juice
1 cupBoiling water
2 tspSalt
5 tbspGhee
1 tspBlack cumin seeds
1 tbspMinced garlic
1/2 tspRed pepper
Procedures:
1Wash lentils thoroughly.
2Place in a saucepan with the turmeric & 5 cups of water.
3Bring to a boil, stirring often.
4Reduce heat & simmer, partially covered, for 25 minutes.
5Stir occasionally.
6Add lemon juice to lentils & cook for a further 15 minutes.
7Turn off heat & beat with a wire whisk.
8Heat ghee, when very hot, add cumin seeds & fry for about 10 seconds.
9Remove pan from the heat & add red pepper & minced garlic.
10Stir rapidly for 10 seconds until the garlic begins to colour, but do not let it brown.
11Pour over the hot puree.
12Serve immediately.
