Groundnut sauce

Ingredients:
1 smallOnion, diced
1 tbspPeanut oil
1 medTomato, sliced thin
2 ea Jalapeno peppers, roasted
-- seeded & minced
2 tbspPeanut butter
1 cupBoiling water
2 tspArrowroot
1/4 tspBlack pepper
Procedures:
1In a skillet, fry onion in peanut oil.
2Add tomato & jalapeno & cook 10 minutes, till soft.
3In a bowl, stir peanut butter, water & arrowroot into a smooth paste.
4Add peanut paste to skillet.
5Sprinkle with pepper.
6Makes 1 cup.
7Serve drizzled over teff cakes.
8Will keep in fridge for 1 week
