Ingredients:
| 2
| cup | Chopped onions | | 2
| tbsp | Peanut oil | | 1/2
| tsp | Cayenne | | 1
| tsp | Garlic cloves, pressed | | 2
| cup | Chopped cabbage | | 3
| cup | Cubed sweet potatoes | | 3
| cup | Tomato juice | | 1
| cup | Apple juice | | 1
| tsp | Salt | | 1
| tsp | Grated fresh ginger | | 1
| tbsp | Cilantro, chopped | | 2
| each | Chopped tomatoes | | 1 1/2
| cup | Chopped okra | | 1/2
| cup | Peanut butter |

Procedures:
| 1 | Saute the onions in the oil for 10 minutes. | | 2 | Stir in the cayenne & garlic & saute for a couple more minutes. | | 3 | Add cabbage & sweet potatoes. | | 4 | Cover & saute for a few more minutes. | | 5 | Mix in the juices, salt, ginger, cilantro & tomatoes. | | 6 | Cover & simmer for about 15 minutes, until the sweet potatoes are tender. | | 7 | Add the okra & simmer for another 5 minutes. | | 8 | Stir in the peanut butter. | | 9 | Place the pot on a heat diffuser & simmer gently till ready to serve. | | 10 | Add more juice if the stew is too thick. | | 11 | "sundays at moosewood restaurant |
