Black skillet beef with greens and red potato

Ingredients:
1 lbsBeef top round
1 1/2 tbspHot 'N Spicy Seasoning
Vegetable oil spray
8 Red skinned potaotes --
Halved
3 cupOnion -- finely chopped
2 cupBeef broth
20 Milliliters Garlic -- minced
2 largeCarrots, peeled -- cut into
Thin 2 ?inch strips
2 bunchGreens (kale, collard --
Mustard, etc) stems
Torn
Procedures:
1Partially freeze beef.
2Thinly slice across the grain into long strips 1/8-inch thick.
3Thoroughly coat with hot "n spicy seasoning.
4Spray a large heavy skillet with vegetable oil spray.
5Preheat pan over high heat.
6Add meat; cook stirring for 5 minutes.
7Add potatoes, onion, broth and garlic.
8Cook over medium heat for 20 minutes.
9Stir in carrots.
10Lay greens over top and cook covered, until carrots are tender, about 15 minutes.
11Serve in large serving bowl with crustybread for dunking.
12Note: to make spice mix, combine ¼c paprika, 2 tb dried oregano, 2 ts chili powder, 1 ts black pepper, ?ts cayenne pepper, ?ts dry mustard.
13Store extra for future use.
