Lentil stuffed peppers

Ingredients:
2/3 cupRed lentils
4 tbspVegetable oil
4 medGreen bell peppers
1 tspCumin seeds
2 Onions, chopped
2 Green chilies
1 1 inch piece ginger, grated
1 tbspGround coriander
1 1/4 cupWater
Salt & pepper
2 tbspChopped cilantro
Procedures:
1Rinse lentils & soak for 30 minutes.
2Heat half oil in skillet.
3Add peppers & cook for 3 to 5 minutes till golden brown.
4Drain & cool.
5Add remaining oil to pan.
6Cook cumin till they begin to pop.
7Add onions & chilies & cook for 8 minutes.
8Stir in ginger & coriander.
9Drain lentils & add to the pan with water.
10Stir well & cover.
11Cook for 15 to 20 minutes til lthe liquid has evaporated.
12Stir in salt & pepper.
13Add cilantro.
14Cut tops off peppers & remove seeds.
15Stuff with the lentils & replace the tops.
16Stand in a baking dish.
17Bake at 350f for 15 minutes
