| 1 | Preheat broiler. |
| 2 | Brush pork chops with vegetable oil and season with salt and pepper to taste. |
| 3 | Broil for 6 to 7 minutes on each side. |
| 4 | While chops are broiling, heat butter in a heavy skillet. |
| 5 | Add apple and onion and saute for about 10 minutes. |
| 6 | Add applejack and bring to a boil. |
| 7 | Scrap brown particles from bottom and sides of pan. |
| 8 | Whisk in mustard and chicken stock. |
| 9 | Boil sauce for 3 minutes. |
| 10 | It should thicken slightly. |
| 11 | Add pork chops to pan and coat with sauce. |
| 12 | Cook 3 minutes longer |
