Ingredients:
4 eachPORK LOIN CHOPS
2 tspVEGETABLE OIL
4 tbspBUTTER
2 eachGRANNY SMITH APPLES
2 eachYELLOW ONIONS
4 tbspCOGNAC OR APPLEJACK
1 tspDIJON MUSTARD
1 cupCHICKEN STOCK
Procedures:
1Preheat broiler.
2Brush pork chops with vegetable oil and season with salt and pepper to taste.
3Broil for 6 to 7 minutes on each side.
4While chops are broiling, heat butter in a heavy skillet.
5Add apple and onion and saute for about 10 minutes.
6Add applejack and bring to a boil.
7Scrap brown particles from bottom and sides of pan.
8Whisk in mustard and chicken stock.
9Boil sauce for 3 minutes.
10It should thicken slightly.
11Add pork chops to pan and coat with sauce.
12Cook 3 minutes longer
