Light chicken quiche

Ingredients:
2 tbspParmesan cheese, non-fat
1/4 tspPaprika
3 Sheets phyllo dough
2 ea Egg whites
1/2 cupEgg beaters
1/2 cupRicotta cheese, non-fat
2 tbspFlour
1/2 cupEvaporated skim milk
6 ozChicken, white meat --
Cooked and cubed
2 ozSwiss cheese -- grated
1 cupAsparagus -- or other
Veggie
2 tbspGreen onion -- chopped
2 tbspParmesan cheese -- grated
Procedures:
1Preheat oven to 350 °F.
2Lightly spray a 9-inch pie pan with vegetable oil cooking spray (butter flavored).
3Combine 2 tablespoons non-fat parmesan cheese with paprika and set aside.
4Stack and cut sheets of phyllo dough in half.
5Place one square of phyllo in pie pan, lightly spray with vegetable oil cooking spray and sprinkle with 1 teaspoon cheese mixture.
6Layer remaining squares and cheese mixture in the same manner.
7Combine egg whites, egg substitute, ricotta, flour and milk.
8Stir in chicken, swiss cheese, vegetables and green onions.
9Pour into prepared pie crust.
10Sprinkle with freshly grated parmesan.
11Bake for 30 minutes or until lightly browned.
12Cool for 10 minutes
