Ingredients:
1 tbspOregano
2 tbspPaprika
2 tbspMSG (monosodium glutamate)
11 tbspGebhardt's Chili powder
4 tbspCumin
4 tbspBeef bouillon (instant
-crushed)
36 ozOld Milwaukee beer
2 lbsPork, cubed (thick butterfly
-pork chops)
2 lbsChuck beef, cut into cubes
6 lbsGround rump
4 largeOnions, finely chopped
10 Cloves garlic, finely
-chopped
1/2 cupWesson oil or kidney suet
1 tspMole (powdered), also calle
-mole poblano
1 tbspSugar
2 tspCoriander seed (from Chines
-parsley, cilantro)
1 tspLouisiana Red Hot Sauce
-(Durkee's)
8 ozTomato sauce
1 tbspMasa Harina flour
-salt to taste
Procedures:
1In a large pot, add paprika, oregano, msg, chili powder, cumin, beef bouillon, beer and 2 cups water.
2Let simmer.
3In a separate skillet, brown meat in 1 lb. or 1 ?lb. batches with wesson oil or suet.
4Drain and add to simmering spices.
5Continue until all meat is done.
6Saute chopped onion and garlic in 1 t. oil or suet.
7Add to spices and meat mixture.
8Add water as needed.
9Simmer 2 hours.
10Add mole, sugar, coriander seed, hot sauce and tomato sauce.
11Simmer 45 min. dissolve masa harina flour in warm water to form a paste.
12Add to chili.
13Add salt to taste.
14Simmer for 30 minutes.
15Add additional louisiana hot sauce for hotter taste. makes 1 pot
