Ingredients:
| 3
| lbs | Ham | | 2
| tbsp | Brown sugar | | 1
| x | Milk | | 1/4
| tsp | Pepper | | 3
| tbsp | Butter, melted | | 1
| quart | Apple, dried | | 2
| cup | Flour | | 4
| tsp | Baking powder | | | 1 ea Egg, well beaten | | 1
| tsp | Salt |

Procedures:
| 1 | Pick over and wash dried apples. | | 2 | Cover with water and let soak over night or for a number of hours. | | 3 | In the morning, cover ham with cold water and let boil for 3 hours. | | 4 | Add the apples and water in which they have been soaked and continue to boil for another hour. | | 5 | Add brown sugar. | | 6 | Make dumplings by sifting together the flour, salt, pepper and baking powder. | | 7 | Stir in the beaten egg, milk (enough to make fairly moist, stiff batter), and melted butter. | | 8 | Drop the batter by spoonfuls into the hot liquid with the ham and apples. | | 9 | Cover kettle tight and cook dumplings for 15 minutes. | | 10 | Serve piping hot on large platter |
