Ingredients:

| tbsp | Cream | | 1
| tbsp | Milk | | 1/8
| tsp | Pepper | | 1
| tbsp | Butter | | 1
| x | *or: | | 1/2
| tsp | Salt | | | 1 ea Egg white, stiffly beaten |

Procedures:
| 1 | Bake large potatoes at 450°F about 40 minutes or until soft. | | 2 | Remove from oven and cut in half lengthwise and scoop out inside. | | 3 | Mash, adding the butter, salt, pepper and cream. | | 4 | Mix well. | | 5 | Fold in the stiffly beaten egg white and blend. | | 6 | Refill potato shells, return to the oven to brown about 10 minutes at 450°F |
