Doughnuts (fastnachts- a shrove tuesday tradition)

Ingredients:
2 cupMilk
1 x*dissolved in:
1 cupSugar
6 cupFlour
1/2 tspNutmeg
1 cupYeast
1 cupWater, warm
1/4 tspSalt
3 ea Egg, well beaten
1/4 cupButter, melted
Procedures:
1Scald the milk and set aside to cool to lukewarm.
2To the dissolved yeast add ?cup of flour and mix to a batter.
3Add to the milk.
4Stir in 1 tsp of the sugar and about 3 cups of flour.
5Set in a warm place to rise over night.
6In the morning, add the well-beaten eggs, nutmeg, butter, sugar, and salt and mix thoroughly.
7Stir in enough flour until batter can no longer be stirred with a spoon.
8Set aside to rise until light.
9Roll on a well-floured board and cut with a doughnut cutter.
10Let rise again, and then fry in hot fat until golden brown
