Ingredients:

| pint | Navy beans | | 1
| tsp | Mustard, dry | | 1
| tbsp | Molasses | | 1 1/2
| tbsp | Sugar | | 1/4
| lbs | Salt pork | | 1 1/2
| tsp | Salt | | 1/2
| cup | Water, boiling |

Procedures:
| 1 | Cover beans with cold water and soak over night. | | 2 | Change the water and cook at slightly below boiling point until skins burst. | | 3 | To test beans, take a few and expose them to cold air; if shells burst, they are sufficiently cooked. | | 4 | Drain off the water and add the salt pork which has been cut into strips. | | 5 | Put in bean pot, having some of the salt pork slices on top. | | 6 | Mix the mustard, sugar, salt, and molasses together and add to the beans. | | 7 | Add the boiling water. | | 8 | Cover pot and bake at 250°F about 6 hours, removing the cover during the last hour |
