| cup | Bacon drippings ** or - | | | -Shortening | | | Ginger | | 1

Procedures:
| 1 | Have roast tied so as to hold shape. | | 2 | Melt shortening in heavy iron skillet. | | 3 | Season the meat with the ginger, salt and pepper, and sear well on all sides. | | 4 | Add the bay leaves, cloves, onion and water, cover tightly, and let simmer about 4-?hours |
