Ingredients:
3 lbsBeef brisket
3 tspSalt
1 eachCelery stalk, with leaves
1 eachCarrot
1 eachOnion, small
1 eachBay leaf, small
3 eachPlum tomatoes
5 eachPeppercorns
1 eachBeef bone
Procedures:
1~------------------------------------------------------------------------ beef brisket boiled with seasoning vegetables gives you the extra benefit of the broth to use as needed.
2This broth freezes very well.
3~-------------------------------------------------------------------------- chop all vegetables quite coarsely.
4Put beef and vegetables in a large pot ( a stock pot is ideal) with cold water to cover.
5Bring to a boil slowly over medium-low heat.
6As the water boils, remove the froth that forms as much as possible.
7Lower heat to simmer, cover the pot, and cook for 3 hours.
8The meat will be very tender and the broth a light brown.
9Remove meat from the pot and use in any recipe that calls for boiled beef.
10Strain broth and use immediately or freeze for future use
