Rice souffle

Ingredients:
1 cupRice
1 tbspSalt
3/4 cupSugar
1/2 tspCinnamon
2 quartWater, boiling
4 ea Egg
1/2 cupRaisins
1 quartMilk
Procedures:
1Add the salt to the boiling water and after washing rice in several waters, stir slowly into the boiling water.
2Cook without stirring for 20 or 25 minutes or until rice is tender.
3Drain off water.
4Beat the yolks of eggs and add the sugar and mix with the milk.
5Stir into the cooked rice and mix well.
6Add the cinnamon and raisins.
7Beat the whites of eggs stiff and fold into the rice mixture.
8Pour into a buttered baking dish and bake at 325°F for 1 hour
