Ingredients:
2 cupPotatoes, cooked
2 cupBeef, cooked
1 smallOnion
1 tspSalt
1/4 tspPepper
4 tbspButter
1 cupBrown gravy
OR
1 cupLight cream
Procedures:
1Put the beef, potatoes, and onion through grinder using the coarse disc.
2Add seasonings and gravy or cream.
3Mix well.
4Melt butter in large skillet and cook hash over low heat about 20 minutes.
5Variation: red flannel hash grind 1 to 2 cups (250-500 ml) cooked beets or carrots along with potatoes and beef.
6About 5 minutes before removing from heat.
7Make 6 depressions in hash with large spoon.
8Fill each depression with 1 egg.
9Cover pan and continue cooking about 4 to 5 minutes or until eggs are cooked.
10Yield: 4-6 servings
