Ingredients:
-Sue Woodward
1 cupBaker's Angel Flake coconut
1 pack6-serving size jello vanilla
-flavor pudding & pie fillng
1/4 cupSugar
1/8 tspNutmeg
1 Egg, slightly beaten
3/4 cupLight cream, or half & half
1/2 cupMilk
5 tbspBourbon, or use 3 tbsp bour-
-bon and 2 tbsp brandy
1 1/2 cupCool whip, thawed
1 9" crumb crust
Procedures:
1Toast coconut and set aside.
2Combine pie filling mix, sugar, and nutmeg in saucepan.
3Add egg, cream, milk, and bourbon.
4Cook and stir over med. heat until mixture comes to a full boil.
5Pour into bowl, cover with plastic wrap and chill until cold; about 1 hr.
6Beat chilled mixture until smooth; fold in whipped topping and coconut.
7Spoon into crust.
8Chill at least two hours.
