Ingredients:

| cup | Baker's Angel Flake coconut | | 1
| pack | 6-serving size jello vanilla | | | -flavor pudding & pie fillng | | 1/4
| cup | Sugar | | 1/8
| tsp | Nutmeg | | 1
| | Egg, slightly beaten | | 3/4
| cup | Light cream, or half & half | | 1/2
| cup | Milk | | 5
| tbsp | Bourbon, or use 3 tbsp bour- | | | -bon and 2 tbsp brandy | | 1 1/2
| cup | Cool whip, thawed | | 1
| | 9" crumb crust |

Procedures:
| 1 | Toast coconut and set aside. | | 2 | Combine pie filling mix, sugar, and nutmeg in saucepan. | | 3 | Add egg, cream, milk, and bourbon. | | 4 | Cook and stir over med. heat until mixture comes to a full boil. | | 5 | Pour into bowl, cover with plastic wrap and chill until cold; about 1 hr. | | 6 | Beat chilled mixture until smooth; fold in whipped topping and coconut. | | 7 | Spoon into crust. | | 8 | Chill at least two hours. | | 9 | Source - baker"s coconut recipe leaflet, c. 1986 |
