Procedures:
| 1 | Prepare and bake crust according to recipe instructions. | | 2 | (see light & flaky pie crust recipe) set aside. | | 3 | Preheat oven to 375°F. | | 4 | In a 2-quart saucepan over med-high heat, simmer applesauce, honey, brandy if desired, vanilla and lemon rind until quite thick, about 10 to 15 minutes. | | 5 | Pour mixture into prepared crust. | | 6 | Arrange apples in concentric circles on top of sauce. | | 7 | In a 1-qt saucepan over med-high heat, melt apricot jam, then press through a sieve. | | 8 | Use a pastry brush to glaze apples with jam. | | 9 | Bake for 30 minutes. | | 10 | Let cool before slicing. |
