Ingredients:
6 cupBartlett Pears, *
3 tbspOrange Juice, Frozen, Conc.
1/2 tspLemon Rind
1 Unbaked 9-inch Pie Shell
SPICY CRUMB TOPPING
3/4 cupUnbleached Flour
1/2 cupSugar
1 tspCinnamon, Ground
1/2 tspGinger, Ground
1/8 tspSalt
1/4 cupButter Or Regular Margarine
Procedures:
1* the bartlett pears should be pared and thinly sliced.
2++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++++ +++ combine the pears, orange juice concentrate and lemon rind in a bowl and toss lightly.
3Arrange the pear mixture in the unbaked pie shell.
4Prepare the spicy crumb topping and sprinkle over the pear mixture.
5Bake in a preheated 400 °F.
6Oven for 40 minutes or until the pears are tender.
7Cover loosely with aluminum foil after 30 minutes if the top becomes too brown.
8Cool on a wire rack before serving.
9Spicy crumb topping: combine the flour, sugar, spices and salt in a bowl.
10Cut in the margarine, using a pastry blender, until the mixture is crumbly
