Ingredients:
20 ozFrozen Raspberries, thawed
2 cupVanilla Wafer Crumbs
1/2 cupSugar
1 tspCinnamon
5 tbspButter, melted
1 packUnflavored Gelatin
1/4 cupWater, cold
1/2 tspLemon Peel
1/2 pintHeavy Cream
1 tspVanilla
Procedures:
1Drain raspberries, reserving 1 cup of the juice.
2Combine crumbs, sugar, ?teaspoon of the cinnamon and the butter; pat into a 10-inch pie plate.
3Bake in a 375 degree oven, 8 to 10 minutes; cool.
4Soften gelatin in water.
5Mix the reserved raspberry juice, the remaining ?teaspoon cinnamon and lemon peel and heat to boiling.
6Remove from heat; add gelatin and stir until melted.
7Chill until mixture just begins to thicken.
8Whip cream; add vanilla.
9Fold raspberries, gelatin mixture and whipped cream together.
10Pour into pie shell.
11Chill.
12Decorate with additional whipped cream if desired.
