Ingredients:

| cup | Boiling water | | 1
| | Package lemon flavor jello | | 1/2
| cup | Cold water | | | Ice cubes | | 2
| tbsp | Grated lemon peel | | 1
| tbsp | Fresh lemon juice | | 8
| oz | Tub cool whip | | 1
| cup | Sliced strawberries | | 1
| | Prepared graham cracker | | | Crumb crust (6oz) | | | Berries and fresh mint for | | | Garnish |

Procedures:
| 1 | Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved. | | 2 | Mix cold water and ice to make 1 ?cups. | | 3 | Add to gelatin, stirring until slightly thickened. | | 4 | Remove any remaining ice. | | 5 | Stir in lemon peel, juice and whipped topping with a wire whisk until smooth. | | 6 | Stir in berries. | | 7 | Refrigerate 20 to 30 minutes or until mixture is very thick and will mound. | | 8 | Spoon into crust. | | 9 | Refrigerate 6 hours or overnight until firm. | | 10 | Garnish with additional fruit and whipped topping and mint, if desired |
