Lemon berry cool'n easy pie

Ingredients:
2/3 cupBoiling water
1 Package lemon flavor jello
1/2 cupCold water
Ice cubes
2 tbspGrated lemon peel
1 tbspFresh lemon juice
8 ozTub cool whip
1 cupSliced strawberries
1 Prepared graham cracker
Crumb crust (6oz)
Berries and fresh mint for
Garnish
Procedures:
1Stir boiling water into gelatin in large bowl at least 2 minutes until completely dissolved.
2Mix cold water and ice to make 1 ?cups.
3Add to gelatin, stirring until slightly thickened.
4Remove any remaining ice.
5Stir in lemon peel, juice and whipped topping with a wire whisk until smooth.
6Stir in berries.
7Refrigerate 20 to 30 minutes or until mixture is very thick and will mound.
8Spoon into crust.
9Refrigerate 6 hours or overnight until firm.
10Garnish with additional fruit and whipped topping and mint, if desired
