Lemony sweet potato pie

Ingredients:
3 Egg yolks
1 cupSugar
1 tbspFlour
1 1/2 cupMilk
1/2 tbspLemon extract
1 tbspLemon peel, grated
2 tbspButter, at room temperature
1 cupSweet potatoes, mashed, cooked
1 Pie shell, unbaked, 9"
Sweetened whipped cream
Procedures:
1Preheat oven to 400°F.
2Beat egg yolks with sugar and flour.
3Add milk, lemon extract, lemon peel, butter, and mashed potatoes; beat until well blended.
4Pour into unbaked pie shell and place on middle rack of preheated oven.
5Bake 10 minutes, then reduce heat to 325°F.
6And continue to bake until pie is firm.
7Serve warm topped with well-chilled sweetened whipping cream
