Ingredients:
FILLING
24 eachDried apricots, halved
1/2 cupWater
1/4 cupMaple syrup
CRUST
1 1/2 cupUnbleached flour
1/2 cupMaple syrup
1 1/2 cupButter
3/4 cupOats
1 cupWalnuts or pecans
Procedures:
1Simmer apricots in water about 1 hour.
2Let cool to lukewarm, and add maple syrup.
3Set aside.
4Cut together crust ingredients.
5Begin by making a well in the flour and then adding other ingredients; mixture will be crumbly.
6Press one half of the dough into the bottom of a lightly oiled 9-inch square pan.
7Pour on apricot filling.
8Sprinkle on remaining dough.
9Bake at 325 °F for 1 hour.
10Cool and cut. serves
