Ingredients:

| | Envelope unflavored gelatin | | 2
| tbsp | Cold water | | 1
| cup | Boiling water | | 1
| cup | Sugar | | 1/2
| cup | Fresh lemon juice | | 1
| cup | Whipping cream | | 11
| oz | Canned mandarin oranges | | | -- drained | | 1
| | 9-inch baked pie crust | | | GARNISH | | | Fresh orange slices |

Procedures:
| 1 | Soften the gelatin in cold water. | | 2 | Stir in boiling water. | | 3 | Add sugar and stir until dissolved. | | 4 | Add lemon juice and stir. | | 5 | Refrigerate until gelatin mixture is slightly thickened but not set. | | 6 | Whip cream until thick and fold into gelatin mixture (you may use mixture set on lowest speed). | | 7 | Add mandarin oranges and stir gently until evenly distributed. | | 8 | Pour into pie shell. | | 9 | Garnish with orange slices. | | 10 | Refrigerate at least 3 to 4 hours. |
