Mikan (mandarin orange) pie

Ingredients:
1 Envelope unflavored gelatin
2 tbspCold water
1 cupBoiling water
1 cupSugar
1/2 cupFresh lemon juice
1 cupWhipping cream
11 ozCanned mandarin oranges
-- drained
1 9-inch baked pie crust
GARNISH
Fresh orange slices
Procedures:
1Soften the gelatin in cold water.
2Stir in boiling water.
3Add sugar and stir until dissolved.
4Add lemon juice and stir.
5Refrigerate until gelatin mixture is slightly thickened but not set.
6Whip cream until thick and fold into gelatin mixture (you may use mixture set on lowest speed).
7Add mandarin oranges and stir gently until evenly distributed.
8Pour into pie shell.
9Garnish with orange slices.
10Refrigerate at least 3 to 4 hours.
